Blueberry Pineapple Toss: You will need, 2 cups blueberries, 1 cup pineapple chunks, one-half cup toasted coconut, and 2 tablespoons brown sugar. Directions: Combine all ingredients in a bowl and toss well. To serve: Serve recipe over vanilla ice cream or vanilla flavor rice or soy ice cream for a fast and easy dessert anytime.
Strawberry Avocado Salad: You will need, 2 cups strawberries (cored and cut into chunks), 1 avocado (peeled, pitted and diced), one-half cup plain low-fat yogurt, one-half teaspoon lemon zest, one-quarter cup walnut pieces, and three-quarters cup cinnamon graham crackers (crumbled). Directions: In a Mixing Bowl, combine the avocado with the yogurt and lemon zest. To serve: Either in clear glass bowls or parfait glasses, place some of the crumbled graham crackers on the bottom, then a layer of the avocado mixture, then a sprinkling of the walnut pieces, then a layer of strawberries, some graham crackers, avocado mixture, walnuts, and then top with strawberries and a sprinkling of the graham crackers.
Raspberry Pear Parfait: You will need, one and a half cups raspberries, 1 large pear (remove core and dice), 2 cups low-fat vanilla yogurt, and one-half cup mini chocolate chips. To serve: Take two parfait glasses or two wine glasses and place a layer of raspberries on the bottom of each glass, then a layer of yogurt on top of the raspberries then sprinkle on some chocolate chips. Next place a layer of pear pieces in each glass, then yogurt, then chocolate chips. Layer again with the raspberries and continue layering until you have used up the ingredients, finishing with a sprinkling of chocolate chips on top of each parfait.
